With all natural grass-fed beef, there's no reason to eliminate steak from your menu. Opt for lean and tasty beef that has been raised without hormones, antibiotics, or other synthetic gunk. Our cattle feast on pasture that provides a salad bar of grasses, legumes, and forbs.
We charge $5.00/lb for split quarters, based upon the hanging weight of the carcass. This does not include the cut charges -- those charges will vary depending upon how you choose to have your meat butchered, and are payable directly to the processor. We are happy to provide assistance if you have questions about how to have your beef cut. If you have a different processor that you prefer, we can have your beef sent to that processor, but we'll need to discuss possible hauling costs if you live far away from here.
Split quarters generally fall into the 100-175 lb range. This amount of meat will fit into a standard kitchen freezer if you pack it right and forego the ice cream for a few weeks. You are also welcome to a share of the organ meats, soup bones, and suet (for those of you who feed the birds). Generally, these are shared equally among interested customers.
A split quarter of beef means that you get half of a front quarter and half of a back quarter. This gives everyone a good variety of cuts.
